PREPARATION

We cook the spinach and put it together in a bowl with the ricotta cheese. Place the plates on a surface previously covered with flour, and gradually place our mixture of ricotta and spinach in the centre, wrap and close well, and leave to rest for 30 minutes.

We boil our tortellini for 2-4 minutes, because it is fresh pasta. Place on a plate and add the green asparagus and tomatoes, sprinkle oregano on top and dress with Palacio Marques de Viana Blend Sublime EVOO.
