Balance and harmony are the notes that define this oil,
a fresh fruitiness of ripe olive with hints of green.

Its aroma is characterised by fruity apple, banana and almond with somewhat ripe tomato, fig leaf and aromatic herbs. Its flavour is complex and elegant with a smooth yet bold entry. Its primary notes are green almond and aromatic herbs and secondary notes, fruits touches of apple and banana. Slightly bitter and piquant; medium structure and good persistence.

To guarantee full sensory tasting, our olives are selected and collected at their peak ripeness and quickly transported to our mill in a maximum space of three hours. Here we perform a cold-press process in a controlled environment that guarantees the quality delivery of flavours and aromas.

In our cellar, inert stainless steel tanks with temperature control, which maintain the oil at a constant 18/20 degrees, guarantee that this oil is preserved in excellent conditions until bottling, safeguarding all its properties of quality, flavour and aroma.

Additionally, the oil is bottled with a touch of nitrogen, a completely innocuous gas that protects the oil from oxidising and guarantees its flavour in optimum conditions when the bottle reaches the customer.
